Gluten Free Red Wine Chicken

I’m way behind schedule on my self-imposed #22NewGFRecipesIn2022 challenge. It’s tough to find new recipes when I’ve been #glutenfree since August 2013 and I did a similar challenge the past two years…. but ultimately, that’s why I started these annual challenges in the first place — to try new recipes, learn new skills and get out of my recipe comfort zone.

So I’ve picked nine new recipes to make between now and the end of the year. Up first is a red wine chicken recipe off All Recipes. It’s fairly straightforward in method and following the comment section, I drastically cut the brown sugar from the one cup it called for to just a few tablespoons.

The color along the way made me a little hesitant to try it, but it has the lightest wine tang amongst the garlic and I’m pretty sure most or all of the alcohol cooked off.

I used a red wine from Trader Joe’s since I (1) wasn’t sure this would work out and (2) I didn’t have an open bottle of red already in rotation. After cooking this one, I 10/10 would make it again.

I’ll see how the recipe keeps for leftovers and if not well, I’d half the recipe I’m the future. TBD on that front.
