Gluten Free Pumpkin Roll

This is technically a recipe I had earmarked for holidays 2022, but to be honest, the entire thing was intimidating so I put it off a bit. I had however purchased special ingredients so I knew I would have to face the process fear and just do it… and I’m very glad I did.

The first recipe towards my #13NewGFRecipesIn2023 challenge is this pumpkin roll recipe c/o The Loopy Whisk, which as you can see looks pretty successful. I did end up with some cracking and it’s a bit more oval than circle, but I’m calling it a win!

The sponge is so light and only took 80g of GF AP total so it all comes down to the air you whip in. 10/10 would make this again and it’s worth taking a Lactaid for.

I might try to make the filling dairy free in the future using plant heavy cream and a vegan cream cheese, but TBH I haven’t found a solid cream cheese alternative yet. Definitely open to suggestions there!
