The final recipe of 2022 and the number 22 in my #22NewGFRecipesIn2022 challenge was peppermint meringues using a recipe by Kathy on AllRecipes.com as a base.
All-in-all, I used the proportions of egg whites, sugar, salt and cream of tartar as written and kept the bake time and temperature the same. Outside of that, I used my own baking knowledge to make a couple of advised edits and I would do them all again.
I added in a few drops of peppermint extract and a couple drops of red gel food coloring since I was looking for a flavor besides just “sweet egg” flavor.
The recipe also stated to bake it on foil which just doesn’t make sense because it’s bound to stick so I baked them on a silpat mat. I also piped them rather than spooning them on like it stared.
I left these to dry overnight too since it is so damp outside and they were still a little sticky despite a few hours in the cracked oven after the 90 minutes of baking.
