I initially saw this recipe in a reel from Becky Excell and immediately saved it as a definite one to try. In the kitchen tonight was a Depression Cake bake, which despite it being winter-sad season, has nothing to do with that. Apparently, it is called this because its roots trace back to the Great Depression when certain food items like butter, eggs, milk, etc. were harder to come by and really expensive.
So this recipe doesn’t call for any of that and as written is vegan and gluten free combining standard pantry ingredients so you could theoretically whip this up whenever.
Admittedly I was concerned I’d messed something up because the batter was very liquidy, but it turned out perfect so just keep that in mind that it’s looser than you’d expect.
Other than that, this one bakes up easy, tastes great and depending on the GF sprinkles you have on hand, would be perfect for plenty of different occasions! Not too sweet with a rich cocoa flavor throughout.
