Gluten Free Baked Salmon

It’s going to be close if I can actually finish my #22NewGFRecipesIn2022 challenge as after tonight, I still have to cross four more recipes off my list before the end of the year. So knowing I had 5 to go and five days, a new dinner recipe was in order because a person can only have so many baked goods.

Since I had fresh salmon on hand and planned to make it this week, rather than go for one of my usual recipes which are made in a skillet, I found a new baked recipe courtesy of Lauren Miyashiro on Delish.com.

I just 1/3 the recipe to fit my salmon which was just over a pound. Other than swapping plant butter for normal butter and using fresh thyme instead of ground thyme, recipe was baked to spec.

All-in-all, it was pretty tasty and I would consider making this one again if I wanted a hands-off bake. If/when making this one again, I’d broil it longer at the end to crisp up the top. I opted for an extra minute this time, but I think I’d drop the cook time by 90 seconds and up the broil to 5 minutes or pause for a “preheated” broil temp.

If I’m looking for something a bit sweeter and have the time, I’ll opt for the glazed recipe I made earlier this year which has become one of my go-to’s since I first made it many many months ago.

Stay tuned to see what I can make after work the rest of this week and on Saturday. Fingers crossed I can make some tasty bakes and dinners between now and then.

Also if you’re looking for local honey and you can’t make it out to one of the local farmers markets, I get mine from a local keeper who stations up across the street from Walmart/Costco on Auburn.
