Gluten Free Banana Cake

Here is one that is sure to be a favorite for years to come! Still on my way to complete my #22NewGFRecipesIn2022 challenge, I had some bananas on hand and rather than make my go-to banana bread recipe, I added a new one in the mix. Today it was the Banana Cake recipe by It’s Not Complicated Recipes.

The only substitutions I made were Country Crock plant butter in place of standard butter, almond milk in place of normal milk (only 2 TBSP total), and a little extra banana — maybe 1.25 cups instead of 1 cup. Otherwise, baked to recipe (including all the tedious sifting) and it smells amazing!

Also it’s worth noting that the recipe called for an 8” spring form and I think my pan is a 10” so bake time was a little less.

Topped with a tangy sweet frosting featuring the always classic Philadelphia cream cheese at its core. 10/10 would make this again, both with and without the cream cheese frosting. I’ll be bringing it to Christmas Eve dinner today so the whole family can enjoy a slice.
