Long time, no new recipe. Between the Sacramento heat and just life, I’ve been falling back on my old staples. Plus after my #50NewGFRecipesIn2020 and #30NewGFRecipesIn2021 challenges, I’m having to get even more creative in using similar proteins or ingredients in new twisty ways.
So up tonight, I made a parmesan crusted tilapia recipe from Testing Table. I’m not sure that I’ve ever used mayo as a binder, but it did work. If I made this recipe again, I would probably broil it for a few minutes to crisp up and remove all of the excess moisture. All-in-all pretty tasty and should reheat well in the oven for a midweek lunch.
