I’m very much a mid-day snack person, and typically my go-to’s include a bar, nuts, seeds and if I have any, GF granola, just for a little pick me up during the work day.
Since finding any in the store is hit or miss, both for availability and GF options, I knew someone had likely made a recipe already, so to my cookbook cabinet I went and thankfully, @beckyexcell’s first book had me covered!
I couldn’t find “puffy rice” cereal at any of the grocery stores around me, so I opted for crispy rice cereal instead. (Fact: rice cereal is one of the rare ingredients where the store brand is almost always GF and the name brand one is not!)
Since I subbed that, I only used 75g instead of 100 since it is way lighter. I also left out the coconut flakes and used 2 tsp of cinnamon instead of 1… because it’s me. 😂
10/10 will make this again and again, adding and experimenting lent different mix ins in the future.
