Gluten Free Roast Potatoes

For recipe number 29 towards #30NewGFRecipesIn2021 I decided on roast potatoes. Now I’ve made plenty of potatoes recipes and shape iterations in my 30 years, but never this traditional UK staple. So for the recipe, I turned to the method outlined on the BBC Good Food website.

First you preheat a pan in the oven dry. Then parboil your peeled and chopped spuds in salted water. Then pre-heat the oil in the baking dish. In my case I used some bacon oil I keep in my freezer.

Once the potatoes boil for a few minutes, drain them and return them to the pan. Then put a lid on your pan and shake them around. Then add a little GF AP flour and give them a shake again so they fluff up.

Then gently add them to the oil and bake for 15 minutes at 400, rotate / flip and then bake for another 15 minutes, twice. Top them with some flakey salt and bam, roast potatoes sorted.
