The final recipe in 2021’s cookie boxes was by far the one I had the most faith in: peanut butter blossoms. I’ve made plenty of gluten free peanut butter cookies in my time, so this one was just a spin and a step up.
This recipe is c/o @MamaKnowsGlutenFree and was super easy to follow. Again I used @countrycrock plant butter as my vegan butter and a flax egg. For the “blossoms” part, I used almond milk chocolate bars from Trader Joe’s.
I doubled the recipe to fill two sheet trays and the remainders I formed and froze for easy cookies with no prep in the future. Win-win and I’ll definitely make this recipe again in the future!
