Gluten Free Vegan Pumpkin Coffee Cake

Fall is hands down my favorite season for many reasons, but pumpkin treats is definitely one of them. Today I baked some vegan gluten free pumpkin coffee cake c/o the recipe from @beamingbaker and they turned out great.

I didn’t make any substitutions to the recipe except adding a tad more cinnamon to the cake because well… it’s me. 😂


I ground up my own oat flour using some @bobsredmill certified gluten free oats. The recipe was super easy to follow and besides needing basically every measuring spoon between the different ingredients, it all came together with ease!


These are pretty healthy and not too sweet. I would and will 100% make this treat again in the future… seasonally and all year round.
