This week I’m hosting Sunday Night Dinner at my place for some picky eaters. Obviously since my house is 100% gluten free, the entire meal is too. So knowing all of that, we settled on some classic baked ziti which I make often. I did want to add something new to the meal, so I turned to @gfshoestring’s bread book and found the garlic knots recipe.
I had all of the ingredients called for in the pantry / fridge except for fresh garlic so I just subbed in garlic powder instead. Like most of the bread recipes in her book, this one also was a two-day recipe, giving the dough time to rest in the fridge for roughly 23 hours total.
Other than the wait time, the recipe is pretty straight forward and pretty similar to the baguette recipe up until the shaping step. Definitely would make this recipe again as they were super tasty and had a great texture. Next time, I’ll be sure to really stack the knots so they’re a bit higher rather than wider.
Growing up in New York (pre-knowing I had celiac), I would always grab some knots and a slice before dance class or on the weekend. Having these hot out of the oven really brought that nostalgia back!
