Yesterday I needed a quickish dessert recipe that was both vegan and of course gluten free… and didn’t require any ingredients this I didn’t already have in the fridge or pantry.

So I went to the cookbook cabinet and settled on attempting the bakery style chocolate chip cookies from @beckyexcell’s cookbook and made edits to make it vegan. So I subbed in organic cane sugar instead of normal sugar, subbed in @countrycrock avocado oil butter instead of dairy butter, subbed in flax / water in place of the egg and subbed in @enjoylifefoods mini chips in place of the milk-chocolate chips. I also was able to use the homemade bourbon whiskey vanilla extract I started back in February for the first time!

While they look nothing like the photo, they’re pretty tasty. Crisp on the outside and softer (but not soft) on the inside. Per recipe, I should have made 15 and baked for 10 minutes. I ended up with 24 and they needed 17 minutes.

Totally would make these again and would make the same vegan adjustments if I was making them for a party.

Also, I think I said this last time, but every time I reference this book, I appreciate the layout and look that much more. As someone who does graphics and marketing on the daily, this book is a beauty in my mind. Highly recommend you pick up a copy!
