Gluten Free Arepas

For dinner yesterday and lunch today, I made the arepa recipes from @beckyexcell’s cookbook and stuffed them with my standard turkey tacos. They’re crisp on the outside and soft on the inside so it’s a win-win for the senses!

This was my first time using cornmeal flour and it definitely is a different texture than cornmeal, corn starch or masa harina, so definitely do not try substituting that. Plus the recipe really only calls for precooked cornmeal flour, salt and water so just stick to the three simple ingredients.

I have only ever had arepas at a restaurant, but the recipe is so simple, I might swap them in when I want to mix up Turkey Taco Tuesday’s / Thursday’s / whatever day I feel like tacos 😂🌮. Super tasty and simple. Totally would make these again so another win for #30NewGFRecipesin2021.

As a person who does marketing and graphics for a living, I will say Becky’s cookbook is one of the more visually pleasing books I’ve seen in while and I can’t wait to make some of the others in the book. Lots of vegan / vegetarian adjustments noted and lots of already dairy free options as written. Highly recommend getting a copy!
