I had some bananas on the edge of going off and I wanted to see if I could tweak my usual go to recipe from @gimmedelicious and make it vegan.

Using what I learned when I made it at recipe number one towards #30NewGFRecipesin2021, I doubled the batch ingredients no problem. Per usual, I subbed in almond milk in place of normal milk.

To make it vegan, I subbed in @countrycrock plant butter, swapped out the normal sugar for organic cane sugar and swapped the four eggs with 4 tbsp of flax meal and 3/4 cup of water.

Baking them in my mini loaf pans meant bake time was around 27 minutes total. They’re pretty moist and soft so I’m calling it a win all around. Definitely could make it this way again in the future.
