So we’re three weeks into the new year and I’ve yet to make a new recipe. Apparently if I don’t have a challenge in place, I stick with the staples.

So I’m kicking off a new challenge officially today. Since I don’t have another 50 new recipes in me and I’ll be turning 30 later this year, I’m settling on #30NewGFRecipesin2021!

So my first new recipe for 2021 was mini banana bread loafs. I used a recipe from @gimmedelicious and doubled it to make a full pan of mini loafs. It also helped that I had 10 bananas and hate to waste so doubling it made sense.

The only substitution I made on this one (besides the pan) was almond milk in place of standard milk. I also think I had 4-5 cups of bananas instead of the 3 that a doubled recipe would call for.

In total, these baked for 25 minutes. Likely would have been ready around 23 minutes but I guessed completely on the bake time. They are wicked moist, not too sweet and my house smells amazing. Definitely would make again. SIDE NOTE: who else spells out b-a-n-a-n-a-s every single time?!
