Meal prepping protein for the week is made much easier with an @instantpotofficial. Some people choose to grill their chicken, but (1) it’s pretty chilly here in Sacramento and (2) grilling is not my strength, so thankfully, I can do all the cooking inside.

I will likely add this to my relatively plain salads (just lettuce, tomatoes, Parmesan cheese and some @go_raw seeds), cook up some rice or quinoa or just eat them solo with a bit of BBQ sauce.

RECIPE!
- 4-6 large chicken breasts (frozen)
- 1-1.5 cups of chicken or veggie broth
- sprinkle of salt
- sprinkle of Italian seasoning
- Put the frozen chicken breasts in the pot.
- Add the stock until it covers about 1/2 of the chicken. Depending on how large your chicken breasts are, you might need to add extra liquid.
- Pressure cook on high for 14 minutes.
- Leave in pot until natural release is complete.
- Slice and serve or store.
Start to finish, it was about an hour from putting the frozen chicken in the pot to slicing them.
