Gluten Free Instant Pot Chicken

Meal prepping protein for the week is made much easier with an @instantpotofficial. Some people choose to grill their chicken, but (1) it’s pretty chilly here in Sacramento and (2) grilling is not my strength, so thankfully, I can do all the cooking inside.

I will likely add this to my relatively plain salads (just lettuce, tomatoes, Parmesan cheese and some @go_raw seeds), cook up some rice or quinoa or just eat them solo with a bit of BBQ sauce.

RECIPE!

  • 4-6 large chicken breasts (frozen)
  • 1-1.5 cups of chicken or veggie broth
  • sprinkle of salt
  • sprinkle of Italian seasoning
  1. Put the frozen chicken breasts in the pot.
  2. Add the stock until it covers about 1/2 of the chicken. Depending on how large your chicken breasts are, you might need to add extra liquid.
  3. Pressure cook on high for 14 minutes.
  4. Leave in pot until natural release is complete.
  5. Slice and serve or store.

Start to finish, it was about an hour from putting the frozen chicken in the pot to slicing them.
