Gluten Free Peppermint Bark

First “recipe” of 2021 was a holiday classic: peppermint bark! Personally, I buy almond bark from where ever I can find it, typically Walmart, Target or Safeway, and use a full package of a chocolate one and a vanilla one.

In the past, I’ve also used white chocolate and milk or dark chocolate bars or chips. I suppose you could use vegan chocolate and so long as you have equal parts, you could make it work.

I melt the chocolate in either a bowl in the microwave in 30 second intervals for about 2-3 minutes total or in a double broiler. If you use straight chocolate bars or baking chips, sometimes you’ll need to add a tablespoon or two to the melted chocolate for it to pour and melt properly.

To each flavor, I add 3/4-1.5 tsp of peppermint extract. Do the bottom layer, then chill in the fridge or freezer for 10 minutes. Then do the second layer and top with crushed peppermints.

I used 6 candy canes and rather than waste a single-use plastic bag, I broken them in thirds and then put them in a glass container and just shook them up.

Chill in the fridge for a few hours and then break it into smaller pieces and put it a sealed container in the fridge. All-in-all, these are wicked simple to make and keep for about 2-3 weeks.
