Technically a new way of making an old dish…. one which I almost never make because (1) my mom kills it, (2) I’m not patient enough and (3) I hate peeling anything. 🥔
Tomorrow I’m having a Friendsgiving dinner and I’m celiac and another friend is vegan, so when I was tasked with mashed potatoes, I had to change the way my mom has always made them.
8.5 pounds of potatoes, sea salt, @countrycrock vegan almond oil butter and I used some of the starch water. As a benefit, my lactose intolerant self doesn’t have to take a lactaid to eat these!
Rather than “mashing” per usual, I ran them through my ricer to smash the pieces. Tomorrow I’ll add a bit more starch and reheat it in the afternoon.
They taste great, but I think I’ll save this for holidays and special occasions… when my mom makes them. 😂
