Gluten Free Fish Sticks

Here’s something I’ve missed since going gluten free: fish sticks. Back in the day, I used to love popping some out of the freezer, right in the oven and then enjoying some delicious breaded mystery fish.

So tonight I made some from scratch in the air fryer using a ten step process:

  1. Cut the fish into roughly 3/4” wide by 2” long. (I used just under 1.5 lbs of fresh tilapia)
  2. Add a sprinkle of salt.
  3. Coat fish in tapioca starch. (I used about 1/3 cup total)
  4. Dip in egg. (I used 2 eggs total)
  5. Coat in breadcrumbs. (I used about 2 cups total with 1.5 tbsp seasoning salt added)
  6. Spray olive oil cooking spray on the tray.
  7. Add fish in a single layer.
  8. Spray cooking spray on top.
  9. Air fry for 11 minutes at 390.
  10. Flip half way through.

I’ll be freezing the leftovers and then I plan to reheat in the oven. We’ll see how they turn our reheated!
