Gluten Free Cinnamon Loaf

In honor of today being my 7 year glutenaversary, I decided some baking was in order! I wanted to make a fun treat and picked a recipe for a cinnamon swirl bread / cake loaf from @gfshoestring. I had to sub some of the cornstarch for additional flour as I didn’t have much in my pantry. I also added in extra cinnamon to the “swirl” and the dough itself because I personally can never have too much cinnamon! 🍞🎂

Also, for a second new recipe, in place of the buttermilk which I can’t have, I DIY’d some! I’ve never done it before and typically just skip over recipes that call for it, but I saw options online for non-dairy milks that combined either lemon juice or apple cider vinegar. For the one cup of buttermilk the recipe called for, I used one cup of unsweetened almond milk and 2 tablespoons of ACV. I let it sit aside for 10 minutes and it got weird so you knew it was doing something.

All-in-all, it baked for about 50 minutes and my house smelled great the whole time. This is super tasty and I will definitely be making it again with my newfound almond milk trick! With the extra cinnamon, it’s not overly sweet so I think it would be good with a cup of tea or just a midday pick-me-up.
