Gluten Free Lemon Pound Cake & Blueberry Sauce

Using what I had in my house, I whipped up a pan of @gfjules lemon pound cake. Now I don’t have a legit loaf pan (just a mini loaf sheet pan) so I opted for a 9” round pan. 🍋

I was hesitant to make it for the family in case it sucked so like I posted yesterday, I made a backup plan brownie. That being said, this might be one of my favorite recipes ever.

I used the juice from two lemons between the glaze and the cake. Plus I subbed in unsweetened almond milk. For my flour, I used @bobsredmill 1-to-1. Also, my zest is a bit on the long / thick side since I just used the finest grater I had. If I add this recipe to my mix of go-to’s, I might get a micro-planer just to add more zest throughout.

As an additional option for my fruit loving dad, I made the @pinchofyum blueberry sauce using some frozen @sprouts blueberries and a light pinch of citric acid to tie into the lemon cake. Never made it before or any reduced fruit sauce for that matter, but it was okay. Not too tart, but maybe I needed to add more sugar since I didn’t measure the berries.

The verdict is in from my non-GF family and…🥁🥁🥁🥁🥁… it’s a hit.
