Gluten Free Bagels

Finally made a decent batch of bagels. While the final product is a bit dense so I still need to tweak the recipe a few more times to 100% nail it. 🥯

I used 3-1/2 cups of GF flour (not sure what brands and I think it’s a blend at this point), 2 tbsp of yeast (definitely should have been 2 tsp but I read it wrong again), 3/4 tbsp of xanthan gum, 2 tbsp sugar, 1.5 tsp. Kosher salt, 1-1/2 cups of warm water and 6 tbsp of butter.

Boiled them for about 45 seconds to a minute each in 8 cups of water, 2 tbsp of molasses and 2 tsp of kosher salt. Topped them with an almond milk egg wash and sesame seeds. Baked for about 18 minutes at 400 degrees.

Definitely will make again and try to perfect the recipe even more than what I think was my fourth time trying to make bagels from scratch. To my future self: please toast the sesame seeds first before adding them to the top.
