Felt like waffles on a Friday night. Worked all day so I needed something easy and only wanted to use ingredients I had in the house. 🧇
Only thing missing from what’s written below are the chocolate and peanut butter chips I added at the last minute. Also, these probably have 3 tbsp of cinnamon because I opened the wrong end of the container. WHOOPS!
I personally eat them plain just as-is and they’re the perfect dinner/sweet treat combo. You could easily top with fresh fruit, syrup, powdered sugar, etc. to taste.
Ingredients
- 7/8 cup GF All-Purpose Flour
- 1 tsp. baking powder
- 1/2 tsp, salt
- 1 tbsp. sugar
- 1 tbsp. cinnamon
- 7/8 cup almond milk
- 1/8 cup coconut oil (melted)
- 1 egg
- 1 tsp. vanilla extract
Steps
- Combine all dry ingredients and whisk together [flour, salt, baking powder, cinnamon, sugar]
- Add vanilla and coconut oil and mix.
- Add egg and mix.
- Add almond milk and mix until combined.
- You can then add any fruit or chips you’d like with a light stir.

- If you’re going to use any blueberries, make sure they’re really ripe or sometimes the texture is off once they heat up.

- Add about half the mixture into your waffle maker and wait for the “ready” light to come on. With my waffle maker, this made two waffles.
